Spinach Tuna Salad

I’ve been too meh to do a blog – though I’ve got some things to blog – but tonight I threw together a salad that turned out so yum, I wanted to write it down.
It’s the product of a failed lunch – in a hurry, I threw a few handfuls of spinach into a go-box with some sliced almonds, then added a packet of tuna. But when I got to work, I didn’t have any appropriate dressing. There was a bottle of the new Kraft mayonnaise with olive oil, though, so I tried that.
The results were edible, but not great. I turned it over in my head for the rest of the day until I decided on a course of action with the leftovers.
That result came out so much better, I am hard pressed to leave any for lunch later.
I am eating some meat again because dance class takes a lot out of me; fish is a good source of protein and the Omega-3 oils my doctor said I needed to combat the cholesterol thing. I don’t like traditional tuna salad (celery, ick) and putting spinach in this is tasty and nutritious.
This is easy peasy lemon squeezy.
Really chop up some spinach, chop it very small. I used about three handfuls out of my bag of the stuff. Combine with two packets of Bumblebee light tuna in water or the tuna of your choice (I actually found it easier to mix the tuna and spinach, then chop).
Mix tuna and spinach well, add enough of the mayonnaise to make a dip like texture. I also added a little lemon juice, some black pepper, and minced garlic. I liked the sliced almonds too, for extra protein.
It was good, I swear. I’ve been scarfing it down with crackers. At this rate I’ll have to make more tomorrow for lunch, but I only have albacore left. I hope it’s just as good.

I make something like this, but instead of almonds I use roasted pumpkin seeds.
